Ok , so you’re probably saying- “she’s done these before !’ Well i’m guilty but not totally. I did make lamingtons earlier here and they are just the regular chocolate lamingtons. The last time i made them and gave them to my friends they simply adored them, which in turn landed me a offer of supplying desserts to my friends wonderful and one of a kind ‘Sunshine Cafe’ in Labone and ‘Little India Sunshine Salad Bar’ in Osu- Accra. If you ever happen to be in town pls do visit for some of the best salads in west Africa. Its been about 3 weeks since i’ve been sending her a few sweet things and of course the lamingtons are one of them. But i tell you in that short time i already got sick of making the same chocolate versions and so decided to try some other flavours. I saw some passion fruits in the supermarket and i knew right away that this citrus y, zingy flavour would be perfect for my sweet lamingtons. A little sweet and tart outside with the earthy flavour and crunch of the dry dessicated coconut and when you bite into it a sweet melt in your mouth vanilla sponge – yumm. The other flavour i could think of was strawberry – i used flavouring for this one, and for the chocolate i sliced the cake and sandwiched it with some caramel before dipping it in the chocolate icing. I’m really excited about the summery passion fruit and chocolate caramel versions as i know they’re quite original (or atleast i’m hoping so). I’m not writing the recipe again as it already mentioned here. But what i could use is a little help or suggestions with other little desserts / slices / cakes that would be ideal for supplying to the Cafe. My imagination is kinda running dry – i dunno why , so a few ideas from all you wonderful bloggers can get the stone rolling for me :D
