Chocolate Almond Butter

The thing with food is, its always in phases. There are days when you follow your healthy routine – do whats good for you and then there are days when to indulge in everything your head tells you not to. All the foods that are screaming fat, grease, sugary are but so tasty – and of course you should have them. Just in small portions occasionally. And once you’re done with that phase and wish to start eating healthy, try finding healthier substitutes for your favourite indulging foods. I love spreads – cheese spreads n butter for breakfast, not to mention nutella ! And then you’re think why can’t this be healthier ? Well good news is – it can. Once you start making nut butter at home, you will discover how insanely easy and effortless it is … you will be addicted. Once you’ve made your first, you can start playing with what kind of nuts to use, how to sweeten them. All the combinations and flavours are endless. How you use the nut better is whole other arena. Use at breakfast over your waffles, spread on toast, make sandwiches or use in cakes as you would nutella. Its perfect to top desserts or just scoop spoonfuls out and lick ’em.

Chocolate Almond Butter Spread

Make this utterly scrumptious Roasted Almond Nut Butter. What makes this butter amazing is that it is roasted a little more than the usual. Its add that lovely robust smokey flavour to the spread. This butter is the perfect thing to snack on when you have a chocolate craving.

 

Roasted Almond & Chocolate Nut Butter

200 gms – Roasted Almonds ( Roast for 10mins at 200C till they start turning brown. Remove and cool completely )

40 gms – Valrhona dark chocolate chopped

2 tbsps – Chopped dates

Pinch of Himalayan Sea Salt

Heat the chopped dates for about 20 seconds in the microwave, as they get creamier and easier to grind. Put everything together in the grinder and churn for about 10 mins stopping in between to scrape down. if you like it a bit grainy, stop at this point, or continue to churn till you achieve a smooth consistency. Add more dates or chocolate as per your taste.

Store in an airtight container in the fridge.

This butter is the perfect thing to snack on when you have a chocolate craving. Spread on toast or spoon into your breakfast bowl of cereal. Add to desserts or smoothies.

This turned out really yum. but should we cover the jar with some neutral oil so that it doesnt go rancid ? if yes what oil options would you suggest so that it doesnt affect the taste of the nut butter ?

Hello Disha,

If you keep this almond butter in the fridge, nothing will happen to it. I’ve kept mine and it stays well. Just set it outside a little bit before you want to have it, so its more spreadable, alternately a few seconds in the microwave does the job. If you feel comfortable adding a little oil, I’d go with a very mild olive oil. That way you’d reap the heat;th benefit of olive oil too
