What kind of a breakfast person are you? Big or light, eggs and sausages or something with fruits, bread or porridge, traditional desi or modern healthy, cheesy sandwiches or opens toasts, waffles and pancakes or smoothies? The options are endless honestly as is ones mood, so sticking to one kind would be kind of difficult. And I do believe variety is the spice of life, you got to try and have it all. Different days, weather, diets, work schedules, mood swings, workout patterns, everything plays a part. The fun is in listening to what your body needs and finding balance in it all and getting the most from the first meal of your day, as what you have for breakfast greatly impacts your day. For me on most days, I have 2 breakfasts, one when I wake early in the morning which is ideally something sweet – oats, homemade granola, chia puddings all topped with seasonal fruits or a fruit smoothie followed by a breakfast of eggs post my morning workout. If you follow me on Instagram you probably must have seen in my stories versions ways to do them, I put them up there more often and so I decided to do a post to have one for the blog. These are very very easy recipes and require no time at all. I use homemade Almond milk and Granola always as do I with nut butters and jams. Once you have stocked up on basics the rest you just throw together. Monday morning are quite my favourite, surprising to many, but yes I can’t wait to take on the week. So I do put in a little extra love into it. Over the weekend I got some lovely Mangosteens, Longans and Black Cherries, thought I’d change it up a little from the regular fruits. Soaked the Chia seeds overnight in some almond milk, no sugar added as the choice of fruits are high sweet enough. I have a beautiful batch of Hazelnut Amaranth ++ Granola stocked up which is just the prefect topping to this Chia pudding. And when you wake in the morning all you have to do is spoon out the Chia into a bowl and top with the fruits and granola. You are good to go. Healthy and super delicious.

 

Ingredients

  • 3 tbsp Chia Seeds
  • 1 cup Homemade Almond Milk
  • Mangosteen
  • Longan
  • Black Cherries
  • 2 tbsp of your favourite Granola

 

The night before, soak the chia seeds in a jar along with the almond milk. I do not add a sweetener to this as the fruits I have chosen are naturally very sweet so they balance it out. You could add some sweetener of your choice if you like the chia sweet. You could try honey, maple syrup, coconut sugar, agave syrup or jaggery. A few hours is enough to plump up the chia seeds well, so when you are ready to eat, spoon it out in a bowl and top with all the fruits and granola. Breakfast is ready. You could have this any time of the day as it makes a very healthy snack.
