When growing up, salad to us was a plate of sliced tomatoes onions and cucumbers, maybe some days carrots and beets too. We never liked salads. You wouldn’t either. I mean seriously its was the most dead plate of food visually. But then we grew up, I got married and started cooking, horrible at the beginning but then got better with time. Discovered that salad is soooooo much more than just a plate of sliced veggies. And every time the salads got better and better , so much so that I’m so addicted to my salads, I’d pass over a meal for my salad.
Salads can vary so much. It could be a warm or cold salad, or a salad to go as a side to mains or just a wholesome meal in itself. Something that will help bring out and compliment the flavours of your main course, or something that will change the palette. And then theres a whole world of salads from Asian, to Mexican, to mediterranean, maybe all mixed up ….. you cannot even try to list ’em all. So you see salads are not just ‘meh – salad ! but rather … S A L A D ! Todays salad is simple and a 100/100 on taste. I have to confess I’m a huge fan of adding a fruit to my savoury salads. It just balances all the flavours so well. This combination of sweet Nectarines, Cherry Tomatoes and Creamy Fresh Mozzarella is outstanding. Add to it some herbs and seeds, you will be in love.
* you can add or take the quantity, I’m just going to list the things you will need
- Cherry tomatoes
- Small balls of Fresh Creamy Mozzarella
- Pepitas – Sunflowers seeds
- handful of basil
- 3-4 tbsp Olive oil
- Salt and Pepper
For the dressing, finely chop the basil and add it to the olive oil. Add the sunflower seeds some salt and pepper and mix well.
Chop the Tomatoes in halves and slice the nectarines. Place them on a platter with the mozzarella . For dressing and toss. Serve immediately .
