Dark Chocolate besides having its benefits is just good for your soul !
Many studies have shown that dark chocolate can improve health and lower the risk of heart disease among other benefits like stabilising blood sugar, controlling appetite, helping to reduce cravings and thereby facilitating weight loss.
Since dark chocolate is higher in flavonoids, it offers the greatest health benefits. Most experts agree that the recommended “dose” of dark chocolate is approximately 30g to 60g/day (roughly 1 to 2 ounces).
One study from 2010 showed that a small dose of dark chocolate could decrease your risk of heart attack and stroke by nearly 40 percent. But it matters what type of dark chocolate you nibble on. For the heart health benefits, reach for at least 70 percent cacao, which is fairly bitter without the added fat and sugar.
So I would insist at this point that for this recipe you stick to dark Chocolate. I’ve used 75% which is my favourite. I’ve used this Chocolate i picked up on my travels in Madrid, Spain, but you can use anything you can find. Just make sure its a good tasting chocolate, and there is really nothing else to this recipe. Sweet Berries and good chocolate.
- 125 gm tub X 3 Blueberries
- 200 gm 75% Dark Chocolate
- 1 tbsp Coconut Oil
- 1-2 tbsp Raw Organic Coaca Nibs
- 1 – 2 tbsp Desiccated Coconut
- Pinch of Sea Salt
*Blueberries : Look for the ripe ones. You would want to bite into a cluster and get sour berries. Would just run your mood.
*Dark Chocolate : Use absolutely the best Dark chocolate you can get your hand on.
In a double boiler, melt the coconut oil & chocolate gently making sure there are no lumps. Add the sea salt and mix. Cool to room temperature.
Mean while wash the blueberries and dry them. Then stir them all together in the chocolate, gently, making sure they all get a coating of the melted chocolate over them.
Line a tray with grease proof paper. Now take a fork and a spoon, and pick out clusters of 3 to 4 berries together, dripping off any excess chocolate and place them on the paper.
Once you have 5 – 6 clusters done, sprinkle them with either cocoa nibs of desiccated coconut so that they stick into the clusters before the chocolate sets. Repeat with the rest of the blueberries till your used them all. Freeze them for 15 mins and they are ready to eat.
Store them in an airtight container in the fridge.
Should stay good for 3 days – 5 days.
