These popsicles are so unique in its flavour combinations. It is basically a blend of two childhood memories. Growing up, here in India, we got served a lot of Rooh Afza. Which is a basically a sweet rose syrup. Either mixed in milk or water like a sherbet. Which honestly I hated as a child. I disliked milk and I disliked rose. But still ever so often when we’d visit relatives, we’d have a glass shoved in our hands and it wouldn’t be polite to refuse, so would have to take a couple of sips, before finding the closest flower pot to pour it into. hahaha
Turns out I think the flavour grew on me. Or maybe it is just a thing we like in Ramadan. After starving all day, a glass of chilled rose sherbet with Basil Seeds / Sabza is so satisfying and cooling. Now Lychee too does give you the same satiating feeling, a chilled de seed sweet fleshy fruit does hit all the right spots. And that’s how this lolly came into being.

Lychee Rose Popsicles
- 2 dozen fresh Lychees
- ½ glass water
- Honey (optional)
- 1 lime
- 3 tablespoons Rose Syrup
- ¾ the glass water
- 2 tsp Basil seeds (sabza)
- Rose petals (wash them well, use organic roses)
- Ice Lolly Molds
- Ice Lolly Sticks
