I’m only just back from my holiday in Bali, and all I can think of is running back to the beach and lazing my summer away. With temperatures in Mumbai soaring to 41C and high humidity it is pretty difficult to like summer here. The only thing I can think of make the season bearable is being on a diet of smoothies and ice-creams. Of course healthier kind. Its tough standing in the kitchen for long hours, its nothing short of standing in an oven. And since I’m working from home, this is all I can think of and do right now. My lovely frozen drink – These Smoothies have got it in all the Tropical flavours that would take you right back to the beach side on a warm summer day. Im not saying anything more … just go on and make them already !
- 200 ml Coconut Milk
- 1 frozen Banana
- 1 small frozen sliced Pineapple
- 2 frozen Mangoes
- 2 Passionfruits
- Young coconut from one fresh coconut
We will start with the coconut layer first.
In a blender, put together ice, coconut milk and the tender coconut. Blend it together till it smooth and spoon a little of it to the glasses. Leave the balance coconut mix in the blender and add to it the banana, pineapple and a little of the mango. Blend again till smooth and add the second layer to glass leaving a little bit behind in the blender. Now add the rest of the mango and passionfruit and blend again till smooth and top up the glasses. Ta – Da ! All your delicious summer falvours in a glass.
