It’s unusually hot, stuffy and dry these days here in Accra(Ghana-West Africa).The Hamatan wind from the north blows in and carries the dust particles from Sahara and brings them thru Nigeria to Ghana.The entire town is covered in muddy brown dust particles and everything has a thick layer of dirt on it.This dust is so fine its in your nose,ur hair,ears,nails and everything possible.If you sit in one place for a bit and the stand up and dust yourself u’ll be shocked to see the dirt u’ve collected.It is’nt so bad always…just for two months starting christmas.And in this hot weather one can think of nothing else but chilled lemonades and icecream.Thats why i thought i’d make this chocolate icecream cake for my friends kids who i am going to see later this evening.Thought it’ll perfect to beat the heat.But little did i realise that it would work against me as well. I started last night by baking the chocolate cake.Very simple basic recipe …
2 cups sugar
1-3/4 cups all-purpose flour
3/4 cup Cocoa
1-1/2 teaspoons baking powder
1-1/2 teaspoons baking soda
1 teaspoon salt
1 cup milk ( i used unsweetened soy milk )
1/2 cup vegetable oil
2 teaspoons vanilla extract
1/2 cup boiling water
Mix together sugar, flour, cocoa, baking powder, baking soda and salt in large bowl. Add eggs, milk, oil and vanilla; beat on medium speed of mixer 2 minutes. Stir in boiling water. Pour in cake tin and bake for 30-35 mins at 350F.Once ready let it cool and then slice off the top levelling the cake.
The next step is super easy. Just take a tub of your fav. icecream and scoop it all over the cake. Level it out with a palette knife, cling wrap it and chuck it in the freezer overnight.
When u need the cake get it out and loosen the bottom and release the cake.Make sure u are fast if u dont want the egdes to melt off like mine did and create a mess.Not that i’m complaining as i got to lick off all the leftovers:-).
