Chia Pudding + Granola + Mango

Weekend breakfasts deserve to be that wee bit special and what better way than starting your day with a healthy dessert. And even nicer knowing that you can make it in just a couple of minutes. Granola is one thing you should always have a jar of, in your kitchen at all times. Its handy not only for whipping up great breakfasts but also an anytime snack during the day. Great to sprinkle on smoothies, top on yogurt or eat it just like that. You can find my recipe here, I keep changing the ingredients in there, depending on what I’m in the mood for or what I have stocked up. Today’s breakfast honestly was just an excuse to cut up this seasons very first lot of Alphonso Mangos. I cannot explain the feeling  of the first bite, after a year of anticipation n anxiously waiting for it. Of a perfectly ripe and chilled Alphonso mango – soft, creamy, sensuous, juicy with a a sweetness from out of this world. Makes you want to throw your head back, close your eyes, and say “Oh Lord what were you thinking when you made this fruit. Thank you ! ” I’m sure all those of you who don’t share the same sentiment are wondering what I’m going on about, but I guess either you’re hater or a lover. What makes this healthy is … errr everything ! Almond milk, chia seeds, a granola thats loaded with nuts and seeds … I think you’d score pretty well on this. Chia seeds is a superfood, a powerhouse of antioxidants, vitamins and minerals. All the carbohydrates in it are from the fiber, they are high in protein and omega 3 fatty acids. In short great for weight loss and very good for you. The almond milk makes this suitable for anyone who is dairy intolerant, plus protein rich. And you can choose any fruits to top it. make the granola ahead and keep, make the chia the night before, all you have to do in the morning is put it together and eat it.

Chia Pudding + Granola + Mango 2-2



  • 200ml Almond Milk
  • 2 heaped tablespoons Chia Seeds
  • 1 tsp Pure Vanilla Bean paste
  • 1 tbsp Honey

Mix all of this in a air tight jar and leave overnight in the fridge. Even an hour would be enough for the seeds to gel up.

To assemble … you can do this any way you like, granola first, chia pudding over it and topped with fruits or in any order your prefer.

Too easy isn’t it ?!!!
