I woke up this morning with a strong craving for Chocolate waffles. I needed them to be insanely delicious, healthy and ready almost instantly. Went to the kitchen and checked stock of ingredients. And I smiled, God is very kind ‘cuz I was pleased with what I saw. I quickly tossed a couple of things together, hoping this would turn out ok, and boy I was !
Recipes like these are simple and effortless and to be shared so without further adieu here it is. I have to tell you, if your waffles are absolutely healthy its ok to indulge with a little bit with your toppings. Well that’s me … you could go either ways. I chose to indulge with some clotted cream, as the waffles are a bit nutty, not too sweet, the blueberries and chocolate add the sweetness and the chilled creamy rich cream add the balance and lifts it all up together. You could substitute it with whatever you like – coconut cream or some greek yogurt or just maple syrup.
- 1/2 cup almond flour
- 1/4 cup + 2 tbsp gluten free oat flour
- 2 tbsp guten free banana flour
- 1 tbsp unprocessed unsweetened cocoa powder
- 2-3 tbsp coconut sugar
- 1 tsp baking powder
- 1tsp vanilla
- 1tbsp almond butter
- 1/4 cup almond milk
- 1 egg
- clotted cream
- grated chocolate
Leaving the last 3 ingredients mix the rest in a bowl. The consistency should be like a cake batter. Thickish.
Preheat your waffle maker and grease it well. Pour spoonfuls and make your waffles as per your waffle maker instructions.
Place them on a plate, dust with caster sugar, top with blueberries, add your cream and lastly some grated chocolate .
